Easy Lentil Curry

I thought I would share a recipe for one of my new easy favorite dishes: lentil curry.  I am new to the world of lentils, and I can't believe I have been missing out for so long.

What are lentils?

Lentils are a legume that come in different color varieties.  They contain high levels of protein and fiber, are low in calories, and are super tasty!  If you're looking to incorporate more vegetarian or vegan meals into your life, lentils are a great meat replacement.


Lentil Curry

For lentil curry, I have used both pre-cooked lentils and uncooked lentils.  Pre-cooked lentils are great because they're super easy to prepare, and still have the same great taste.  Trader Joe's sells a great pre-cooked, steamed variety.  These have definitely become a staple in our house.

Ingredients:



Steamed pre-cooked lentils
Jasmine or basmati rice
Thai red curry sauce
Coconut milk

That's it!

Cook the lentils and rice according to package instructions.  In a sauce pan, combine 1 part Thai red curry sauce to 1 part coconut milk, heat and mix until blended together.  Alternative: there are many curry sauces that are sold already mixed together.  Look for a chicken masala or butter chicken curry sauce.

Serve the lentils over the rice, and the curry sauce on top.  Optional: garnish with fresh herbs, or, if the Thai red curry sauce is not spicy enough for you, drizzle a little hot sauce (Sriracha!) on top.
